Nutrition is really important during pregnancy!
In our home, we try to eat as many paleo meals as possible. We are certainly not perfect, as busy seasons lead to eating out or ordering in or settling for something quick and easy instead of taking the time to buy fresh foods and cook healthy.
We have been cheating quite a bit in my third trimester with my weakness: ice cream! The closer I get to my due date (6 weeks yah!!) the more I want to get back on track with eating paleo. I’ve been trying to find some healthy, paleo substitutes for my recent sweet tooth, and these yummy little bites packed with fiber are just perfect!
Here are the ingredients and instructions:
1 Cup Uncooked Rolled Oats
2/3 Cup Toasted Unsweetened Coconut Flakes
1/2 Cup Almond Butter
1/2 Cup Dark Chocolate Chips (ok, these aren’t paleo but they’re dark chocolate and I didn’t use a lot of them, so I’m gonna say it’s ok)
1/2 Cup Whole Ground Flaxseeds
1/3 Cup Honey (I highly suggest good quality honey like Kiwi Bees
1 Tablespoon Chia Seeds
2 teaspoons Vanilla Extract
Instructions: mix all the ingredients together, roll tablespoon size balls with your hands, place them in the refrigerator and enjoy!
All about the good stuff:
Flaxseed: good source of fiber and omega-3 (fiber great for mommy, omega-3 great for baby’s health and development)
Chia Seeds: like flaxseeds, high in omega-3
Rolled Oats: hello, more fiber!
Coconut flakes: protein and fiber (yes, MORE fiber! Plus, baby loves protein!)
Almond Butter: a great healthy fat with lots of fiber (preggos gotta love that)
Honey and Chocolate Chips: satisfy my sweet tooth 🙂
